We had a fantastic lunch prepared for us by the restaurateur and Chef at King of Kelowna restaurant so because ‘Everything Lends it’s self to Video’ Why not do a series on the Best Kelowna Restaurants? Seeing the chefs prepare food while they talk of their culinary experience, what an awesome way to find out the best places to eat. I fully believe that to be good at anything you have to be passionate about it, anyone can take cooking classes but if you love food, love life and love people…well you are on your way to being a great chef. Hira is an example of a great chef!

This dish is a tribute to an experience I had in Taiwan at the historic Grand Hotel when I was served the classic Peking duck. My version uses a dry hickory smoker to impart great flavor, then slow roast the duck to render the fat and achieve the desired crispy skin. Side dishes are Japanese soba noodles with stir fry vegetables, bok choy and napa cabbage. The classic presentation of wrapping the smoked duck in flour wrappers and topping with hoisin sauce makes for an Asian inspired gourmet presentation.
